Paprika Shrimp Salad

I’ve never been a salad girl. If you take me out to dinner in a nice restaurant, I’m getting a juicy sirloin with a loaded baked potato and green beans. That’s my ideal meal. But lately I’ve been getting a craving for something light and refreshing with really good flavor. I think it’s because I’ve been working on my mental well-being and my body needs some extra attention to feel good too. Physical and mental well-being go hand-in-hand.

Over the weekend I didn’t have the time to put together my favorite spring roll, so I thought I’ll turn it into a quick salad. My mouth was watering by the time I grabbed my fork to dig in.
Let’s get to it
First, I grabbed a bag of frozen shrimp and popped a few pieces into a skillet with olive oil and smoked paprika. While the shrimp was cooking I chopped up Romaine lettuce, cut a few cherry tomatoes in half, and peeled a carrot. This salad didn’t have very many ingredients at all. I think that’s why I enjoyed it so much, it’s simple and delicious. Normally, I would’ve added in some cucumbers and fresh avocado, or maybe a red pepper. The pantry was lacking on this day.
Once the shrimp was nice and cooked, I simply piled it onto the salad I just built and topped it off with my favorite dressing – Chick-fil-A’s Avocado Lime Ranch. Cue the happy ending.
Of course I had to snap a quick picture because it looked so beautiful and colorful. There you have it – Paprika Shrimp Salad with Avocado Lime Dressing. Unfortunately, I couldn’t convince my husband to take a bite, but maybe next time.
